Bebidas: Cucumber Cooler with Elderflower Liqueur
Summer, meet your new best friend. Perfect for those hot afternoons on your porch or, if you are in a climate similar to mine, a great pick-me-up to those overcast evenings. This cucumber cooler is crisp and light yet full of flavor.
I hadn’t used Elderflower liqueur before trying this recipe and I must say I am a fan. It has floral qualities with a hint of sweetness, but far from being too sweet. A perfect addition to the mint and cucumber flavors.
Cucumber Cooler Cocktail
- 3 cucumber slices
- 5-8 mint leaves
- 1 ounce lime juice
- 1 ounce Elderflower liqueur (St. Germain is popular but I prefer Thatcher’s because it is organic)
- 1.5 ounce vodka
- 1 ounce of club soda
In a cocktail shaker, muddle three cucumber slices. Add mint, elderflower, lime juice and vodka with ice and shake it like a polaroid picture. Strain into a glass over fresh ice. Add the club soda on top and garnish with cucumber and mint.
